Pour this over a heap of ice and the room basically smells like a proper G&T before you've even cracked the tonic. Big, clean pine-fresh juniper up front, then a citrus lift that wakes the whole glass up. This is the gin bartenders quietly trust. It doesn't shout, it just makes everything you build on it taste right. Late night, friends over, you want the classic done well? Grab the litre and you're sorted till morning.
Nose it and juniper leads, all crisp pine and a squeeze of fresh orange and lemon peel. The first sip is bright and properly dry, citrus zing rolling into a gentle warmth from coriander and a whisper of liquorice. Underneath there's an earthy, almost nutty depth from orris and almond that keeps it grounded rather than soapy. The finish is clean and peppery, the kind that begs for tonic and a wedge of lime. Nine botanicals, all pulling their weight, nothing muddy.
The details
Pairs well with
Where it's from
Beefeater is one of the very few gins still actually distilled in London, at the Kennington distillery in the south of the city. The recipe goes back to a pharmacist named James Burrough in the 1860s, and the trick has barely changed since: the nine botanicals are steeped in the spirit for a full 24 hours before distilling, which is how it pulls out that deep, full flavour. Old-school method, still done properly, still in London. That's the whole point of it.
