First whiff is a flower garden, not a forest. Honeysuckle brings a honeyed sweetness, chamomile adds that calm, feather-soft floral thing, and the pomelo gives you a pulpy citrus lift that's rounder and less sharp than lemon. The juniper is still there, just polite about it, weaving through underneath so it still drinks like a real London Dry. A pinch of peppery warmth from cubeb berries on the finish keeps it interesting. Smooth, soft, gently sweet. Nothing about it bites.

Bloom comes out of G&J Distillers in Warrington, England, one of the oldest gin houses around. It's the work of Master Distiller Joanne Moore, one of the few women to hold that title in the gin world, who built the recipe back in 2009 because she wanted a gin that didn't lead with juniper. It's triple-distilled from English wheat, then layered with seven botanicals including that signature chamomile, honeysuckle and pomelo trio. Floral by design, not by accident.
