Pour this over a fat cube of ice, drop in a lime wedge, and you've basically made a mini holiday in a glass. Bombay Sapphire is the blue-bottle gin everyone knows, and for good reason: bright lemon up front, a gentle peppery warmth on the way out, nothing harsh, nothing boozy-burny. This one lands as a gift pack with a cocktail set, so it's the easy win when a mate's birthday sneaks up on you, or you just want your home bar to look like you know what you're doing. We'll run it to your door, any hour.
First sniff is all bright citrus, fresh lemon peel with a little floral lift behind it, like someone zested a lemon next to a flower stall. On the tongue it's smooth and clean, a soft lemony sweetness with a backbone of juniper (that piney, gin-y note), then it warms up. The finish is where it gets fun: a peppery tingle from cubeb and grains of paradise, plus coriander and juniper hanging around. Smooth, not sharp. It plays nice with tonic instead of fighting it.
The details
Pairs well with
Where it's from
It's English through and through, distilled in England off a recipe that goes all the way back to 1761. The clever bit is how it's made: instead of boiling the botanicals in the spirit, the vapour rises through baskets of the ten botanicals and picks up their flavour on the way past. That gentler method is why it tastes so bright and floral rather than heavy. Today it's distilled at Laverstoke Mill in Hampshire, a slick glasshouse distillery on the river. The blue bottle, by the way, is a nod to a Star of Bombay sapphire.
