First hit is bright orange peel and ruby grapefruit, with a little floral, herbal lift and a faint peppery tingle on the nose. The sip is where it gets interesting: syrupy orange zest and a touch of honey and cherry sweetness, then a wave of clean, mouth-watering bitterness rolls in behind it. The finish is long and a bit medicinal in a moreish way, all bitter orange and quinine, the kind of bitter that makes you instantly want another. Don't let the bitterness scare you. Stretched with soda or sweet vermouth it turns into something dangerously easy to love.

Campari is pure Italy. Gaspare Campari first mixed up this red bitter back in 1860, and by the late 1860s it was the talk of his cafe in Milan's grand Galleria Vittorio Emanuele. The recipe is one of drinks' best-kept secrets, a closely guarded infusion of herbs, aromatic plants and fruit that only a tiny handful of people know in full. Fun bit: that signature red used to come from crushed cochineal insects, until the brand swapped the dye out in 2006. The colour stayed iconic, the bugs did not.
