Canadian Club has been made since 1858, when grain merchant Hiram Walker set up shop in Walkerville, Ontario. The clever bit is how it's built: corn, rye, rye malt and barley are distilled separately, then blended together before they ever touch a barrel. Most whisky gets blended after ageing; CC does it the other way round, which is where that smooth, married-together character comes from. It then rests in white oak ex-bourbon barrels for years before bottling. Walker put his name right on the barrel as a promise of quality, and the recipe's stayed honest ever since.
