Get your nose in first. Dried fruit and fig lead, with candied orange, a hit of walnut and soft floral notes underneath (think violet, not perfume). The sip is full-bodied and mellow at once, layering plum, vanilla, a whisper of coffee and a dusting of nutmeg and cinnamon. Then it just keeps going, a long, smooth oak finish with gentle spice and a nutty edge. Nothing about it shouts. It glows.

Where it's from

Martell is the oldest of the great cognac houses, set up back in 1715 in the town of Cognac, France. Their trick: they distil only clear, sediment-free wine and age it in fine-grained oak, which keeps the spirit smooth. This XO leans on eaux-de-vie from the prized Grande Champagne and the rare, creamy Borderies cru, blended from over a hundred different spirits aged roughly 15 to 35 years. That patience is the whole point.
