First sniff and you're somewhere between a bakery and an orchard: vanilla and crème brûlée, dried apricot, stewed pear, a little dark chocolate and cinnamon. Sip it and it goes full dessert. Caramel and creamy vanilla, candied orange, raisins and Christmas-cake fruit, all wrapped in soft, velvety oak. There's a touch of floral iris in the background keeping it elegant rather than sticky. The finish is long and opulent, drifting into spice, fruitcake and a faint cigar-box dryness. Forty percent ABV that drinks smooth and warm, never harsh.

Courvoisier is based in Jarnac, in France's Cognac region, and here's the clever bit: they own barely any vineyards. Instead they've got relationships with over a thousand winemaking and distilling families, many going back generations, and they buy in eaux-de-vie to blend their own house style. The XO is a marriage of very old spirits, some up to around 35 years, drawn from the prized Grande and Petite Champagne crus plus a little of the floral Borderies. The XO Imperial blend itself was dreamt up back in 1984 when a small family producer sent over a Borderies sample that turned out to be the missing piece.
