Dark ruby in the glass, and the nose hits you with ripe black fruit. Think blackberry and blackcurrant, with a whiff of wood and roasted coffee bean sitting behind it. First sip is all juicy dark fruit and that green leafy 'cassis leaf' lift Cab is famous for, then the tannins kick in and give it backbone. It's structured and dry, finishes long, and leaves a little grip on your gums that begs for another bite of food. Not a shy wine.

Where it's from

This comes from Domaine de la Baume, an estate in the village of Servian in the sunny Languedoc, tucked between Béziers and Pézenas in southern France. There's real history here: the Prat family bought the place back in 1880 and rebuilt the vineyards after phylloxera wiped them out, even opening a Paris boutique on Boulevard Haussmann around 1900. These days it's run by the Helfrich family of Grands Chais de France. The grapes grow on clay-limestone soil, and the wine is fermented in steel tanks and put through malolactic, which rounds off the sharp edges and gives it that smooth, ripe feel.
