This comes from El Esteco, a winery in Cafayate up in Salta, northern Argentina, going since 1892. The Don David name is a nod to founder David Michel. What makes it special is the altitude: the vineyards sit well above 1,600 metres in the Calchaquí Valley, some near 1,700, baked by more than 300 days of sun a year. That intense high-desert light gives the grapes thicker skins and deeper colour, which is exactly why this Malbec tastes so concentrated. The wine then spends about a year in oak barrels to round it out.
