This comes from Durbanville, a cool little pocket of the Western Cape just 20 minutes from Cape Town and barely 10km from the cold Atlantic. That ocean matters. A south-easterly wind the locals call the Cape Doctor blows in off the sea and keeps the slopes cool, so the grapes ripen slowly and hold onto all that bright acidity. The winery itself is a team effort, a handful of neighbouring family farms who pooled their vineyards in the late 1990s to show off what their corner of the Cape can do.
