EPC comes out of the Coteaux du Sézannais, a stretch of chalky hills in the southern reaches of France's Champagne country. The grapes are grown and made around the village of Bethon, where that chalk soil is exactly what Chardonnay loves, giving the wine its freshness and that flinty, mineral backbone. "Blanc de Blancs" literally means "white from whites", which is the fancy way of saying it's made only from white grapes, 100% Chardonnay, no red grapes in the blend at all.
