Two Brits, Charles Rolls and Tim Warrillow, got fed up that you could buy a beautiful gin and then ruin it with chemical-tasting tonic. So in the mid-2000s they went hunting for the real thing, all the way to the Democratic Republic of Congo, to source natural quinine from original cinchona trees.
