This comes from Maison Mumm in Reims, the heart of France's Champagne region, where the cellars run for kilometres under the city. Pinot Noir is the house's signature grape, and you taste it here as the backbone, structure and red-fruit punch, rounded out with Chardonnay for elegance and Meunier for fruit. The blend pulls from over 120 different crus, and a splash of still red wine is folded in to give it that salmon colour and forest-fruit intensity.
