Gamla is one of the labels from Golan Heights Winery, up in Katzrin in the cool, high north of Israel. The vineyards sit on an old volcanic plateau, basalt soils and altitude that climb well over a thousand metres, which keeps the grapes cool and the acidity crackling. The winery only got going in the mid-1980s but quickly put Israeli wine on the serious map. The fruit is picked from those high northern plots and fermented slow and cold to lock in all that fresh varietal character. It is also fully kosher.
