Gin Mare is made in Vilanova i la Geltrú, an old fishing town on the coast near Barcelona, inside an 18th-century chapel. The clever bit is in the method: each botanical is macerated and distilled on its own before being blended, so the olive, rosemary, thyme and basil each get to say their piece. The citrus peels (orange, lemon, mandarin) soak for a whole year, and the Arbequina olives are the same ones that go into top Spanish olive oil.
