On the nose you get lime leaf, honeydew melon and a faint whiff of buttery toast, like the edge of a fresh brioche. The first sip is all bright citrus and stone fruit, think lime, nectarine and a squeeze of lemon, before a creamy, slightly toasty finish smooths everything out. That creaminess comes from a touch of French oak doing quiet work in the background. Dry, fresh, juicy, never sharp.

This comes from the Limestone Coast in South Australia, a cool-climate patch of country famous for its crushed-limestone soils that give whites that clean, lively edge. Hesketh is a family outfit started by Jonathan and Trish Hesketh in 2006, though the family's been knocking around the Aussie wine trade for over sixty years. The fruit ferments mostly in stainless steel to keep it fresh, with a small portion resting in French oak barrels for a few months. That oak is why you get the creamy, faintly toasty finish.
