Pale straw in the glass with a steady chain of tiny bubbles climbing up. The nose is fresh and clean: green apple, lemon and lime zest, a little white-flower lift, and that warm bready, almost toasty hint that comes from the wine resting on its lees. On the palate it's dry (that's what Brut means) but never austere, with crisp apple and citrus, a whisper of toasted almond, and a clean, snappy finish that leaves you reaching straight back for the glass.

Where it's from

This comes from Bodegas Vicente Gandia, a family winery in Spain that's been at it since 1885, based around Requena in the Valencia region. Hoya de Cadenas is their flagship label. The Cava is made the traditional way, the same painstaking method used for Champagne: the wine gets a second fermentation inside the bottle and then rests on its lees, which is where those fine bubbles and that gentle bready note come from. The grapes are the classic Spanish trio for Cava: Macabeo, Xarel-lo and Parellada.
