First whiff is pure sweet shop. Vanilla, brown sugar and a banana-bread kind of softness, with toasted oak sitting underneath. This comes out of Lynchburg, Tennessee, from America's oldest registered distillery. What makes it a Tennessee whiskey (not a bourbon) is one extra step called the Lincoln County Process. Before it ever touches a barrel, every drop trickles slowly through about 10 feet of sugar maple charcoal that the distillery burns itself. That's where the legendary smoothness comes from. Then it ages at least four years in new charred oak barrels they also build on site. Corn-heavy mash, limestone water, no shortcuts.
