This comes out of Lynchburg, Tennessee, from America's oldest registered distillery, going since 1866. Here's the cool part: before it ever sees a barrel, the fresh spirit drips slowly through 10 feet of sugar-maple charcoal, three days to trickle all the way down, across rows of giant vats. They call it the Lincoln County Process, and it's the step that strips the bite and leaves Jack that signature smoothness. Then it rests in new charred oak barrels until it's good and amber.
