Deep toffee-brown, gently spiced, with crunchy biscuit bits running through it so every bite has a bit of snap. Crack the lid and the whole room smells like warm cinnamon baking. First hit is pure caramel, like the burnt-sugar edge of a good crème brûlée, then a soft cinnamon-and-spice warmth (they call it speculoos) rolling in behind it. It's Belgian through and through, made by Lotus Bakeries, the people behind the famous caramelised biscuit since 1932. The spread itself is younger: it started as a home cook's idea on a Belgian TV invention show around 2007, the judges loved it, and Lotus turned it into the jar you're holding. It's roughly two-thirds actual crushed Biscoff biscuit, which is why it tastes exactly like the real thing. Still baked in Belgium today.
