Martell is the oldest of the big cognac houses, going since 1715 in the town of Cognac, France. Cordon Bleu itself dropped in 1912, made by Édouard Martell and his cellar master Auguste Chapeau, and it was actually the first cognac ever to get its own name instead of just a quality grade. They launched it at the Hôtel de Paris in Monaco and the rich crowd on the Riviera went mad for it. The recipe still leans hard on Borderies eaux-de-vie, which is what gives it that round, almost floral softness. More than a century on, barely changed.
