This comes out of the Olmeca distillery in Arandas, deep in the Los Altos highlands of Jalisco, Mexico, where the red volcanic soil grows famously fragrant Blue Weber agave. The piñas (the agave hearts) get slow-cooked in masonry ovens, then some of the juice is crushed the old-school way under a tahona, a heavy volcanic stone wheel, before being double-distilled in copper. That tahona-pressed portion is what gives even this easygoing bottle a bit of proper character. Olmeca itself is named after the ancient Olmec civilisation, a nice nod to deep Mexican roots.
