First sniff is the giveaway: warm brioche and roasted almond, almost like marzipan, sitting over fresh lemon and citrus zest. Then baked apple and a whisper of red fruit from the Pinot Noir. On the palate it's the opposite of thin sparkling wine. It's rich, creamy and full, with a soft toasty weight that coats your mouth, and those fine bubbles keep it lifted. Finishes proper dry and savoury, so it never goes sweet or cloying. That depth is earned: it sits on its lees (the spent yeast) for years, which is exactly where the bread-and-pastry character comes from.

Where it's from

Silverthorn is a small family winery in Robertson, in South Africa's Western Cape, run by John Loubser, a Cape Winemakers Guild member who learned his craft at serious houses like Graham Beck and Steenberg. The Jewel Box is his showpiece. He built it to chase the richness of his favourite Champagnes, Krug and Bollinger, using the traditional method (the same way real Champagne is made, second fermentation in the bottle). Chardonnay and Pinot Noir, hand-harvested and whole-bunch pressed, part-fermented in old French oak, then aged long on the lees. Small-batch, properly made, no shortcuts.
