The Singleton comes out of Dufftown, a distillery sitting beside the Dullan Water in Speyside since 1895, the quiet heart of Scotch country. Diageo built the Singleton name in 2006 to give these gentle, fruit-forward malts a home of their own. The trick with the 21 is the casks: it's matured largely in European oak that once held sherry, which is exactly where all that dried fruit and warm spice comes from, then married in American oak for that smooth, rounded finish.
