First whiff is a summer meadow: floral, then that rounded juniper rolls in with a zesty citrus snap. Sip it and it starts gentle, almost dry, before a little sweetness opens up like lemon tart and orange marmalade. Then bolder juniper comes back through with a whisper of liquorice and warm spice. Full-bodied, properly dry on the finish, no rough edges. Classic done right, not flashy.

Where it's from

Sipsmith fired up its copper pot still in a little Chiswick workshop in West London in 2009, the first traditional copper-pot gin distillery to open in the city in nearly 200 years. The still is named Prudence, and master distiller Jared Brown runs it the slow, honest way: "one-shot" distillation, meaning the ten botanicals go in and what comes out is the gin, not a concentrate watered down later. That's why it tastes this full and this true.
