Sipsmith fired up its copper pot still in a little Chiswick workshop in West London in 2009, the first traditional copper-pot gin distillery to open in the city in nearly 200 years. The still is named Prudence, and master distiller Jared Brown runs it the slow, honest way: "one-shot" distillation, meaning the ten botanicals go in and what comes out is the gin, not a concentrate watered down later.
