Six Dogs is a small South African distillery on the fringe of the Karoo, in the Hex River Valley a couple of hours out of Cape Town. The name? The founders, Charles Bryant and crew, started out distilling in an old farm shed where Charles's six dogs slept, using a copper still welded from an abandoned water geyser. This bottling came from a sustainability project: a bee-conservation outfit relocated rescued bees to the farm, which sits right where the Fynbos and Karoo biomes meet. The honey those bees made, plus limes grown on the farm, became this gin. Real terroir, no marketing fairytale.
