Open it and the ginger hits first, bright and a little fiery, then the cardamom comes in floral and sweet. Underneath there's warm cinnamon, a clove kick and the gentle bite of black pepper, with nutmeg rounding it all off mellow and nutty. In the cup it turns ordinary milk tea into something layered and cosy: warming, lightly sweet, never harsh. A pinch is all it takes.

Where it's from

Tropical Heat is about as Kenyan as it gets. It started back in 1973 as a tiny cottage outfit, got picked up by the Shah family in 1986, and grew into one of East Africa's biggest spice and snack names out of Nairobi. Fifty-odd years on, that tea masala jar is a fixture in Kenyan kitchens. This is the homegrown blend behind countless cups of chai across the country.
