Then it lands crisp and dry on your tongue, ripe tropical fruit up front with a flinty, almost saline mineral streak underneath, the kind cool Elgin fruit gives you. Bright acidity keeps it lively and the finish hangs around longer than you'd expect. Refreshing without ever being sweet.

Where it's from

Waterford Estate sits in Stellenbosch, one of South Africa's most respected wine addresses. But for this bottle they go shopping outside their own backyard. The Sauvignon Blanc fruit comes from Elgin, a cool, high-altitude pocket near the coast where the sea breeze and longer, slower ripening lock in all that nervy acidity and green-fruit freshness. It's fermented in stainless steel to keep things crisp and clean, then left on its lees for a while to build that fine, textured mouthfeel. Cool place, smart hands.
