First hit is all vanilla and caramel, with a little honey and a twist of orange peel sitting behind it. Take a sip and it goes sweet and rounded, then the rye in the recipe wakes up and brings a gentle nip of pepper, cinnamon and clove. Underneath it's classic bourbon: toffee, a touch of oak, a whisper of dried fruit. The finish is warm and medium-length, spice and caramel hanging around just long enough to make you go back for more. Bold but never harsh.

This comes out of Lawrenceburg, Kentucky, home of the Russell family. Jimmy Russell has been making Wild Turkey since 1954, one of the longest-tenured distillers in the business, and his son Eddie shaped this everyday bottling. It's aged in American white oak barrels given the deepest possible toasting, the No. 4 'alligator' char, named because the charred wood crackles into a pattern like alligator skin. That deep char is where a lot of the colour and that big vanilla-caramel sweetness come from.
