Big and full on the tongue. The nose leads with blueberry, blackcurrant and a hit of dark chocolate, with that classic Cab graphite-and-cigar-box edge underneath (think pencil shavings and a wooden box, in the best way). On the palate it's dark blackberry and plum, the oak folded right in from 18 months in French barrels. The tannins are firm but polished, so it grips your cheeks a little then lets go into a long, savoury finish. Dry as a bone, no sweetness.

Where it's from

Zevenwacht sits on the Stellenbosch wine route, a farm with a 300-year history that the Johnson family took over in 1992. The name is old Dutch for "seven expectations," a nod to the pleasures the estate promises. These grapes grow on decomposed-granite slopes that catch cool Atlantic sea breezes, which is the secret to a Cab this deep in colour and flavour but still fresh. It's a true single-estate wine: grown, made and bottled on the same land.
