This comes from Cono Sur, a Chilean winery started in 1993 with a slightly rebellious streak. The grapes grow in the San Antonio Valley, just 15km from the Pacific, where cold Antarctic breezes off the Humboldt Current keep the vines cool and the fruit crackling with acidity. The vineyards are certified organic, and Cono Sur leans hard into it: they let geese roam the rows to eat pests instead of spraying, ride bikes around the estate, and were one of the first wineries to ship carbon-neutral. The name nods to the Southern Cone, the bottom tip of South America where Chile sits.
