First sniff and it's cooked agave dipped in toffee, with a citrusy lift like lime zest and a whiff of vanilla off the oak. The sip is silky and gently sweet: honey, butterscotch, baked pear, a little toasted nuttiness. Then it stretches out long and warm with vanilla, cocoa and a soft oak spice on the way out. Almost no burn. It's rich without being heavy, and that's the trick.

This is the bottle Don Julio González dreamed up back in the day: he was one of the first to plant agave wider apart so each one grew bigger and sweeter, and to bottle tequila as something you'd sip, not shoot. It comes from the Highlands of Jalisco in Mexico, made from 100% Blue Weber agave that's left to fully mature before harvest. The Añejo landed in 1996 and quickly became a benchmark for what aged tequila could be.
