This comes from the highlands of Jalisco, Mexico, around Atotonilco el Alto, where the red volcanic soil gives blue Weber agave a sweeter, brighter character. The man behind it, Don Julio Gonzalez, started his own distillery back in 1942 at just 17 with a small loan. Every agave is hand-harvested at full maturity, slow-cooked to coax out the sugars, then double distilled in pot stills. Blanco is the unaged original, the blueprint every other Don Julio is built from.
