It's grown and aged in the fertile foothills of Mount Kanlaon, an active volcano, then rested at least seven years in oak. The name honours Papa Isio, a real folk hero and healer who led sugar workers in revolt against Spanish rule in the 1890s and held out in the hills long after everyone else had surrendered.
