First whiff is honey, then a lift of orange peel, dried herbs and a little black pepper, almost like sweetened hay in the best way. On the tongue it's properly sweet and syrupy but never flat, with heather honey and orange leading, a hint of liquorice and warm spice (think clove and nutmeg) and the Scotch glowing right through the middle. The finish is long and herbal, honey-warm, fading slow. Sip it small, it rewards patience.

Where it's from

Scotland, and the backstory is pure legend. The name comes from the Gaelic an dram buidheach, "the drink that satisfies," and the recipe is said to trace to Bonnie Prince Charlie, gifted to the MacKinnons of Skye after he fled the Battle of Culloden in 1746. The version we drink today was perfected on the Isle of Skye, trademarked in 1893 and produced in Edinburgh from 1910. The exact blend of herbs and spices is still a closely guarded secret. These days it's made by the fifth-generation Scottish family distiller William Grant & Sons.
