Then the bitterness rolls in proper: dark herbs, a whisper of liquorice and anise, earthy rhubarb and gentian root underneath. There's saffron and myrrh in the secret blend of 27 botanicals, and you taste that fragrant, almost incense-like edge. A flicker of bittersweet keeps it from being punishing. The finish is long, dry and cooling, with peppermint hanging around long after the glass is empty. Not sweet, not soft. Bold and unforgettable.

Where it's from

Fernet-Branca is pure Milan, made by Fratelli Branca since 1845 and still run by the same family. It started life as a medicinal tonic dreamed up by herbalist Bernardino Branca, sold for everything from cholera to upset stomachs. The recipe is a genuine trade secret, with only a handful of people alive who know the full list. The 27 botanicals are sourced from all five continents (aloe from South Africa, rhubarb from China, gentian from France, saffron in the mix) then steeped in grape spirit and rested in oak barrels for at least a year. Cool footnote: the Hanky Panky cocktail that uses it was invented by Ada Coleman, the legendary woman behind the bar at London's Savoy.
