It's made in Vilanova i la Geltrú, a little fishing town on the Catalan coast just south of Barcelona, by the Giró Ribot family who've been distilling since the 1800s. The gin itself is fairly young (born in 2007) and it's pot-distilled in a former chapel on the family estate. Here's the clever bit: every botanical is soaked and distilled on its own, then blended. The Arbequina olives need so much fruit that they use about 15kg per batch, and the citrus peels macerate for a whole year before distillation. That patience is exactly why it tastes like nowhere else.
