This comes from Gérard Bertrand, a former pro rugby captain turned one of the South of France's biggest wine names, working out of the sun-soaked Languedoc. The clever bit is in the name. "Gris Blanc" means grey-white, and that's exactly the trick: the red Grenache grapes are pressed straight away with no skin-soaking, so almost no colour bleeds in. That's the old "vin gris" method, and it's why this looks barely pink while still tasting like rosé. Cool fermentation and a few weeks resting on the lees keep all that delicate fruit locked in.
