Nose first: a little floral lift, ripe strawberry, a handful of red summer berries. Then the bubbles do their thing, lively and persistent rather than a quick fizzle. The fruit carries through on the palate, but here's the clever part. Because it's built from Cabernet Sauvignon (unusual for a rosé), there's a real spine of acidity underneath all that red fruit, so it tastes fresh and bone-dry instead of sugary. Brut means properly dry. You get the berry without the candy.

This comes off Rietvallei Estate in the Robertson Valley, a corner of South Africa with lime-rich soils that the locals swear give the wines their freshness. The John B name is a nod to John Burger, carried down the generations of a family that's been farming this valley since 1864 and helped turn Robertson into one of the country's serious wine regions. So yes, there's heritage in the bottle. But they made this one to actually open and enjoy, not to stare at.
