St-Rémy is proudly 100% French and has been since 1886, when the house set up shop in Machecoul down in the Loire Valley. The clever bit is that it isn't tied to one region like cognac is. The grapes come from vineyards all over France, from Champagne and Burgundy to the Rhône, Bordeaux and Beaujolais. The XO launched in 1990 and is built from older eaux-de-vie, none younger than six years, all rested in small French oak barrels. Master Blender Cécile Roudaut has been the one marrying it all together since 2016, and she's good enough to have been named Blender of the Year in 2022.
