This comes from Sakurao Distillery in Hatsukaichi, Hiroshima, a house that's been brewing sake and shochu since 1918. When they hit their 100th birthday in 2018, they put a century of distilling know-how into gin, using brand-new German copper stills and a clever hybrid method that both steeps the botanicals and catches their flavour in the rising vapour. Of the 14 botanicals, 9 are grown right there in Hiroshima, a region famous for its citrus and its cherry blossom. That's why it tastes so unmistakably of the place.
