First thing you get is the bubbles, tight and fine rather than aggressive, then that signature quinine bitterness comes through. It's not harsh. There's a light sweetness underneath that softens the edge, so it lands bittersweet and clean rather than sour. Cold, it's properly bracing. The whole point is that it lifts a spirit instead of drowning it, which is why a splash makes gin sing and a tall glass on its own over ice still feels like a treat.

Where it comes from

Schweppes is the granddaddy of fizzy drinks, started by Jacob Schweppe back in 1783 when carbonating water was brand new and faintly magical. The tonic itself arrived in 1870 as 'Indian Tonic Water', built around quinine, a bitter compound from cinchona bark that British officers in India took to fend off malaria. They mixed it with gin to make the medicine drinkable, and accidentally invented the most famous mixer on earth. You're drinking history that got a lot more fun.
