First thing you notice is the fizz. Tight, persistent, almost prickly on the tongue, the kind that doesn't go flat on you halfway through. Then comes the quinine: a dry, gently bitter edge balanced by just enough sweetness so it never puckers. It's bright and clean rather than sugary, with a faint citrus lift on the finish. On its own it's properly grown-up. Mixed with gin it does the real magic, stretching the botanicals and adding that signature snap.

Where it's from

This is the drink that started a whole category. Jacob Schweppe cracked the art of carbonating water back in 1783, and the brand later earned a royal warrant in 1836. The tonic itself arrived around 1870 as the first commercial quinine tonic water, built on a colonial-era trick: British outposts in India mixed bitter anti-malarial quinine with soda and sugar to make it drinkable, and the gin and tonic was basically born by accident. The quinine still comes from the bark of the cinchona tree. So that bittersweet bite in your glass has genuine history behind it.
