First whiff is all ripe dark fruit: cassis (think cordial-thick blackcurrant), black cherry and a hint of that spiced fruitcake everyone hides from at Christmas. Underneath, the French oak does its quiet work, lending cedar, a little toast and the sandalwood-and-cigar-box thing good Cab does so well. On the palate it's full and juicy, with tannins that grip the sides of your mouth without drying you out, a flash of raspberry freshness to keep it lively, and a finish that just keeps going. Dry, structured, properly grown-up.

Where it's from

Stellenbosch is South Africa's Cabernet heartland, the gorgeous wine town behind Cape Town, and this range is named after its landmark old buildings. The Cabernet honours the Ou Hoofgebou, the Old Main Building of Stellenbosch University, a stately campus icon that's now home to the Law Faculty. The grapes come from several sites across the Stellenbosch hills, each adding its own twist, then the wine spends about 12 months in seasoned French oak to round it off. The range has been doing this since 2005, so they've had plenty of practice.
