First whiff is fresh and open: white peach, a little hawthorn and acacia blossom, a soft note of vanilla. Then the bakery shows up, that toasty brioche-and-honey warmth you only get from years resting on the lees. On the palate it's lively and elegant, citrus and ripe orchard fruit riding a creamy texture, finishing crisp, dry and clean. Not sweet, not heavy, just balanced and moreish.

Where it's from

Maison Taittinger is a Chardonnay-loving house in Reims, the heart of Champagne, and this blend pulls fruit from more than 35 vineyards. The cool detail: their wines rest in the Crayères, chalk caves first dug by the Romans back in the 3rd and 4th centuries, now a UNESCO World Heritage site. Down there in the cold and the quiet, the Brut Réserve sits on its lees for around three to four years, well past the legal minimum, which is exactly where that brioche depth comes from.
