Nose first: ripe lemon, pear and a little tropical melon, with a soft hint of vanilla and toast underneath. That toasty, almost coconut-cream note is the French oak it was fermented in, not sugar. The palate is full and creamy at the start, then bright lemony acidity arrives at the middle and pulls everything tight. The finish is dry with a stony, mineral edge from the volcanic soil. Long, fresh, and never flabby.

This comes from Golan Heights Winery in northern Israel, under their premium Yarden label. The grapes are hand-picked from cool, high vineyards that climb up to around 1,200 metres on old volcanic basalt soil. High and cold means the grapes ripen slowly and hold onto loads of natural acidity, which is exactly why this Chardonnay tastes rich but still fresh. It's also certified kosher.
