Zevenwacht sits on the Stellenbosch Wine Route in South Africa's Cape Winelands, on cooler, breezy slopes near Polkadraai that run a couple of degrees chillier than central Stellenbosch. That cool edge is exactly what Chenin Blanc loves, keeping the acidity bright and the fruit clean. The Johnson family took over the estate in 1992 and farm it across a big maritime property, and the name Zevenwacht roughly means 'seven expectations'.
