Zevenwacht sits on the Polkadraai Hills in Stellenbosch, South Africa, on decomposed granite slopes that catch the breeze coming off False Bay. The cool name has a real story behind it: those slopes were once home to one of the Cape's odder ventures, an actual tin mine that ran in the years before the First World War. The wine is named after it. The fruit is whole-bunch pressed and fermented right in 500-litre French oak barrels, then left to settle on its lees for around ten months. That barrel work is exactly where the creamy weight comes from.
