In The Vineyard
The Chenin Blanc and Sauvignon Blanc grapes are collected from vineyards in the Stellenbosch, Darling and Malmesbury areas.
Grapes are harvested from mid-January to mid-February at a temperature between 21 degrees to 23 degrees celsius
In the Cellar
The juice did not receive any skin contact and was fermented at 13 degrees Celsius. It was left on the lees for two weeks to impart depth of flavor
