Where it's from
This comes from Asconi, a family winery in Moldova going since 1994 and now one of the biggest family-run names in the country. The grapes are Rhine Riesling grown in the Codru region in the centre of the country, on rich black chernozem soil. The clever bit: they leave the fruit hanging late into the cold, hand-pick it while it's frozen solid, then press out the ice so only a tiny amount of intensely concentrated, super-sweet juice runs free. That juice ferments slow and cold in steel for about six weeks. Tiny yield, huge flavour.
